Sweet Chilli Salmon

This is a very simple dish and makes for an ideal lunch.  It also adds tasty and healthy to quick and easy.

Prep time:  5 mins

Cooking time:  25 mins

  • Salmon fillet
  • Olive oil
  • 2 cloves garlic
  • 10 grams fresh ginger
  • Rosemary 1 teaspoon
  • Basil – 1 teaspoon
  • 1/2 Lemon
  • Honey – 1 tablespoon
  • Chili flakes –  1 teaspoon
  • 3 stalks asparagus
  • 250g Jasmine Rice
  • 3 Spring Onions
  • 1/2 Lime

Method:  Add your salmon fillet to a baking tray with kitchen foil.  Add a generous amount of olive oil.  Lie the salmon face down after ensuring it is coated in oil dust with rosemary and basil.  Turn the fillet over and repeat on the front.  Then squeeze the juice of half a lemon on the salmon.  Next, cover your fillet with honey then dust with chili flakes.

Add three stalks of asparagus cut into three pieces per stalk to the baking tray.  Fold the foil to make a parcel then add to your over at 250 for 25 mins.  Serve with Jasmine Rice, Lime, and Spring Onion.
